Aylesbury Pekin breed duck is air pumped to separate the skin and flesh, glazed in a mixture of red rice vinegar and maltose, and dry aged for 10 days to achieve a glassy crispy skin texture, this specialty is prepared by us for you to cook and enjoy at home. To be enjoyed with our range of condiments and sauces and delicate steamed pancakes.

PEKING DUCK PACK INCLUDES:

1 x dry aged maltose glazed Aylesbury duck crown (2 breasts)

20 pieces of duck pancakes

Cucumber and spring onion slivers

6 accompanying sauces and condiments

  • Classic hoisin sauce

  • Beijing style sweet bean paste

  • Sesame and garlic sauce

  • Ginger and spring onion relish

  • Plum sauce

  • Peanut and sesame sugar

THIS DISH REQUIRES SOME COOKING AND ASSEMBLY

Steam pancakes over a small pot of simmering water, or in the microwave on a covered plate for 1 minute. Keep warm.

Preheat oven to 165°C

Make sure duck is at room temperature before cooking

Place on a foil-lined tray breast side up, and bake in the oven for 18-20 minutes, turning the tray 180° halfway through cooking so the colour is nice and even - remove and rest the duck until oven increases in temperature

Increase the oven temperature to 185°C - place duck back in the oven for 10-12 minutes or until the skin is evenly golden brown and the internal temperature registers 58-60°C, allow to rest for 2 minutes and carve breasts off the crown, slice into 1cm thick slices and serve with condiments and pancakes.
